"Sakkarai(Vellam/Jaggery) Pongal" is a simple to make and very special traditional sweet rice dish variety made in special occasions in South India like Pongal  festival or any traditional festivals using jaggery as main sweet ingredient some use white sugar also that's another type, this dish was made for this "Tamil New Year" recently by my mom, she is good at this dish especially I love it the way she does it.Its taste and consistency will be awesome and flavor really stays in your taste buds even after you finish your eat. 

"Sakkarai(Vellam) Pongal"

Recipe

Ingredients

1. Pachai arisi (raw rice) - 1 cup

2. Jaggery powdered - 2 cups

3. Pasiparuppu(split moong dal) - 1/4 cup

4. Cardamom - 4 nos

5. Cooking oil - 100 ml

6. Ghee - to your requirement

7. Cashew nuts - to your requirements

8. Raisins - to your requirements

Method

1. Dry roast pasiparuppu first in a frying pan till you get an aroma (don't roast till dark brown ).

2. Now in a pressure cooker add rice , roasted pasiparuppu and 4 cups of water and pressure cook for 5 whistles so that the rice and dal gets nicely cooked.

3. Now after the whistle settles down open the cooker and add cooking oil then add powdered jaggery , powdered cardamom and nicely stir till the jaggery gets well mixed with the rice.

4. In a frying pan add 1 tblsp of ghee and roast the cashew nuts and raisins and add them to the rice in cooker and finally pour some melted ghee over the rice to give an aromatic finish and serve hot.

"Sooji Bread Toast" is one colorful and tastier bread toast snack recipe that has good flavor and aroma, it came out well thanks to "Sharmis Passions". The taste of this sooji bread toast will be really good and its toasted spicy batter coating is treat to your taste buds. It is quite simple to make and serve. 


Best when eaten independently or with tomato sauce.


"Sooji Bread Toast"

Recipe


Ingredients

1. Bread Slices - 4 slices

2. White Rava (Sooji) - 1/2 cup

3.  Big Onion - 1/2 no chopped

4.  Red chilli powder -  1 tsp

5. Yogurt - 1/2 cup

6. Coriander leaves chopped - 2 tsp 

7. Turmeric powder - a pinch 

8. Ghee to toast 

9. Salt - to taste


Method

1. Take a mixing bowl and add white rava , chopped onion , red chilli powder , yogurt , coriander leaves , turmeric powder , salt and mix all the ingredients and bring it to a batter form and keep it ready.

2. Now take a spoon full of batter and spread over one side of the bread and keep it ready.

3. Then add  1 tsp of  ghee to the heated tawa and gently place coated side of the bread on the tawa and toast it till mild golden brown color and flip the bread and spread the batter to other side of the bread and again toast till mild golden brown color , while doing this keep your flame in medium mode for best results.

4. Thats it our tasty Sooji bread toast is ready and serve it hot with tomato sauce .

"Thai Tom Yum Soup"

"Thai Tom Yum Soup"


Ingredients

1. Lemongrass - 1 to 2 stalks chopped.

2. Kaffir lime leaves- 3 to 4 leaves

3. Garlic cloves - 3 to 4nos

4. Fish sauce - 3 tbsp

5. Fresh lime juice - 1 tbsp

6. Red chilly - 1 no

7. Normal Mushrooms - 12- 15 nos

8. Coconut milk - 1/2 can

9. Fresh coriander leaves - 1/2 cup

10. Brown Sugar -1 tsp

Method

1. Pour vegetable stock with low sodium content  into a deep cooking pot and wait till it gets boiled up.

2. Add lemongrass to the stock and boil for 1-2 minutes and add  3-4 whole kaffir lime leaves to the soup pot and  reduce heat to medium and add 3-4 cloves garlic, pressed or finely chopped/minced.

3. Add fish sauce, fresh-squeezed lime juice,brown sugar and red chili.

4. Now add the sliced mushrooms to the pot allow it cook for 2-3  mins and then reduce heat to low, add 1/2 can coconut milk and cook for 3 mins and taste the soup if not salty enough, add more fish sauce, cook for few mins and finish your cooking and serve hot!

"Peanut Chutney" is a simple and tastier chutney variety made from peanuts which is well know for its flavor and rich in vitamins and minerals that are necessary for us. Its taste and flavor will be very elegant.

Best side dish for hot Idly and Dosa

Recipe

Ingredients

1. Peanuts - 1/2 cup

2. Red chilly - 2 nos

3. Garlic - 2 nos

4. Coconut scraps - 1/4 cup

5. Tamarind - small quantity as shown.

6. Salt - to your taste

7. Mustard seeds , Uradh dhal/White bengal gram - 1/4 tsp each

8. Oil - 2 tbsp

9. Curry leaves - 6 - 7 nos




Method

1. Add peanuts, red chilly , coconut scarps , tamarind , garlic to a mixer grinder and add required quantity of water and salt to it and grind to smooth paste and keep it a bowl separately.

2. Now in a pan add 2 tbsp of oil and when oil gets heated up add mustard seeds and uradh dhal and when mustard seeds crackle put curry leaves and add to the chutney in the bowl and nicely stir it, peanut chutney is ready to serve.

"Easy Thai Shrimp Saute", is a simple to make and a classic Thai dish and its one of my favorite appetizer made for my hubby's birthday dinner party which came out excellently well and you know he just loved it...!:-) the taste was very different as it had a flavor mixture of salty,lemony, little bit sweet and the consistency of the shrimp was awesome..you have to try to feel it.

Best for a candle light dinner, when served with thai sticky  rice, naan, or crusty french loaf.

"Easy Thai Shrimp Saute"

Recipe



1. Medium to large shrimp or prawns, butterflied (shells can be removed or left on, as desired) - 12- 15 nos.

2. Thai Oyster sauce - 1 1/2 to 2 tbsp

3. Soy sauce - 1 tbsp

4. Fish sauce -  1 tbsp

5. Brown sugar- 1 tbsp

6. Cloves minced garlic(to taste) - 5 to 6 nos

7. Lemon juice - 2 tbsp

8.Oil for stir-frying - 2-3 tbsp

9. Fresh red chili, minced - 1 no  (OR) dried crushed chili - 1/2 tsp or to your taste

10. Lime or lemon wedges - To your needs

11. Coriander  leaves - To your needs or 1 handful

Method

1. Marinade/sauce preparation:  Oyster sauce, soy sauce, fish sauce, brown sugar, garlic, lime juice, chilli in a mixing bowl and nicely mix all.

2. Nicely mix shrimp in the sauce and so that the sauce gets evenly coated on all sides of the shrimp.

3. Heat some oil in a frying pan, when oil becomes hot, add the shrimps along with the sauce.

4. Stir-fry 2-3 minutes, or until shrimp becomes plump and pink. They will also be lightly browned from the sauce. (Don't overcook, shrimp will turn rubbery.)

5. Garnish with coriander leaves and lemon wedges as shown or to your creativity.



Try it and you will enjoy like anything especially when its a Candle light dinner with your special ones:-)

"Mixed Vegetable Upma"

"Mixed Vegetable Upma" , is another simple and tastier dish from South India, the combination of vegetables and the peanuts gives us a mix up flavor and the taste of peanuts in between the bites gives us one complete eating feel and ofcourse its look will be very colorful and it has its own aroma when served hot!

Best when taken along with lemon pickle or mango pickle also you can try with any other pickles too.

"Mixed Vegetable Upma"

Recipe

Ingredients
1. White rava / sooji - 2cups

2. Beans(finely chopped)-1/2 cup

3. Carrot(finely chopped)-1/2 cup

4.  Peas - 1/4 cup

5. Peanuts - 2tbsp

6. Medium size onion(finely chopped) - 1

7. Green chilly(finely chopped) - 2nos

8. Turmeric powder -1/4tsp

9. Salt -To your taste

10. Mustard seeds -1/4 tsp

11. Broken urad dhal -1/4 tsp

12. Oil -2tbsp

 
Method
1. First step is to dry roast the ravai/sooji till its colour changes slightly in medium heat ,once its done keep it seperately . 

2. Now in a deep bottom pan heat oil and add mustard seeds , urad dhal , curry leaves and when the mustard seeds crackle add peanuts and roast them a little bit n then add finely chopped onions , green chillies and saute them nicely add salt and all the veggies(peas,beans,carrots) ,turmeric powder and little water for the veggies to get cook , cover the pan and cook for 3-4 mins or till the veggies are 3/4th cooked. 

3. Then add 4cups of water to pan and wait for it to boil, meanwhile check the salt, when the water starts boiling add the ravai little by little and simultaneously  mix the water also , otherwise there will be lumps , once all the rava is mixed with water cover the pan and cook for 2-3 mins. 

4. Finally open and see if the water is fully soaked and the upma is dry,  now stir it again and again so that it becomes dry, thats it finish your cooking and serve hot it with lemon or mango pickle.
