"Mixed Vegetable Upma" , is another simple and tastier dish from South India, the combination of vegetables and the peanuts gives us a mix up flavor and the taste of peanuts in between the bites gives us one complete eating feel and ofcourse its look will be very colorful and it has its own aroma when served hot!

Best when taken along with lemon pickle or mango pickle also you can try with any other pickles too.

Recipe

Ingredients
1. White rava / sooji - 2cups

2. Beans(finely chopped)-1/2 cup

3. Carrot(finely chopped)-1/2 cup

4.  Peas - 1/4 cup

5. Peanuts - 2tbsp

6. Medium size onion(finely chopped) - 1

7. Green chilly(finely chopped) - 2nos

8. Turmeric powder -1/4tsp

9. Salt -To your taste

10. Mustard seeds -1/4 tsp

11. Broken urad dhal -1/4 tsp

12. Oil -2tbsp

 
Method
1. First step is to dry roast the ravai/sooji till its colour changes slightly in medium heat ,once its done keep it seperately . 

2. Now in a deep bottom pan heat oil and add mustard seeds , urad dhal , curry leaves and when the mustard seeds crackle add peanuts and roast them a little bit n then add finely chopped onions , green chillies and saute them nicely add salt and all the veggies(peas,beans,carrots) ,turmeric powder and little water for the veggies to get cook , cover the pan and cook for 3-4 mins or till the veggies are 3/4th cooked. 

3. Then add 4cups of water to pan and wait for it to boil, meanwhile check the salt, when the water starts boiling add the ravai little by little and simultaneously  mix the water also , otherwise there will be lumps , once all the rava is mixed with water cover the pan and cook for 2-3 mins. 

4. Finally open and see if the water is fully soaked and the upma is dry,  now stir it again and again so that it becomes dry, thats it finish your cooking and serve hot it with lemon or mango pickle.
