"Onion Thokku"

"Onion Thokku", is a special and tastier thokku variety made from onions and garlic  as main ingredients , I love this dish very much because of its glossy look and the mouth watering taste,  you will keep on eating it till you get scoldings from your mom;-) .

Best side dish for Idly, dosai ,curd rice , chapati and white rice.

This dish can be taken for your family picnics...you will really enjoy it.

"Onion Thokku"

Recipe

Ingredients

1. Big Onions - 1/2 kg

2. Gingely Oil - 150 ml

3. Garlic - 6-7 pieces chopped into two halves.

4. Chilly powder - to your taste

5. Turmeric powder  -  1/4 tspn

6. Tamarind water -  1/4 cup thick consistency

7. Dry roasted fenugreek powder (Vendhayam powder) - 1/4 tsp

8.  Salt - To taste

9. Sugar - 1 pinch

Method

1. Take a pan and add gingely oil allow it to get heated up lightly and then add chopped garlic and cook till you get an aroma and then add chopped onions and nicely cook till onions become tender and soft consistency.

2. Now add chilly powder and turmeric powder and cook for 2 mins.

3. Then add tamarind water and cook for few minutes say 3-4 mins approximately and add salt and vendhayam powder and finally add a pinch of sugar and allow it to cook for 5 mins in medium flame by closing the lid of your pan.

4. After 5 mins open the lid and check wheather oil got separated nicely and if its separated then finish your cooking or else cook till oil gets separated.

"Peanut Chutney" is a simple and tastier chutney variety made from peanuts which is well know for its flavor and rich in vitamins and minerals that are necessary for us. Its taste and flavor will be very elegant.

Best side dish for hot Idly and Dosa


"Peanut Chutney"

Recipe

Ingredients

1. Peanuts - 1/2 cup

2. Red chilly - 2 nos

3. Garlic - 2 nos

4. Coconut scraps - 1/4 cup

5. Tamarind - small quantity as shown.

6. Salt - to your taste

7. Mustard seeds , Uradh dhal/White bengal gram - 1/4 tsp each

8. Oil - 2 tbsp

9. Curry leaves - 6 - 7 nos




Method

1. Add peanuts, red chilly , coconut scarps , tamarind , garlic to a mixer grinder and add required quantity of water and salt to it and grind to smooth paste and keep it a bowl separately.

2. Now in a pan add 2 tbsp of oil and when oil gets heated up add mustard seeds and uradh dhal and when mustard seeds crackle put curry leaves and add to the chutney in the bowl and nicely stir it, peanut chutney is ready to serve.

"Thakkali Thokku"

"Thakkali(Tomato) Thokku" , is a tasty and special variety thokku made in South India with simple ingredients and its especially prepared during trips and you will really enjoy this thokku while in your trip , this thokku can be used for 3 - 4  days together when packed in air tight containers.


Best side dish with chapati, Idly , Dosa and curd rice.

Recipe
 
Ingredients

1. Ripe Tomato - 6 nos

2. Mustard seeds , curry leaves - 1/4 tsp , 5-6 nos

3. Chilly powder - 1 tsp

4. Sambar powder - 1/2 tsp

5. Gingely Oil - 5 tsp

6. Salt - To Taste

7. Fenugreek powder (Vendhaya podi)- 1 pinch (In a pan add 1 tsp oil and when oil gets heated up add 1 tspn fenugreek and roast it till they become brown color and then make to powder)

8. Jaggery - 1 small piece

Method

1. In a frying pan add 5 tsp of gingely oil and add  mustard seeds , curry leaves , chopped tomatoes and cook for sometime till tomatoes gets nicely cooked up(while cooking nicely smash the tomatoes)

2. Now add red chilli powder, vendhaya podi, salt and sambar powder to tomatoes and again cook for sometime and finally add  jaggery and cook till thokku consistency and finish your cooking.

"Chutney Kuzhambu"

"Chutney Kuzhambu" , is a simple and easy to make dish influenced from French rulers in Karaikal district of Tamil Nadu during independence period as told by my grand mother and its famous dish till date,  in this same dish we can add cinnamon and cardamom to give extra flavor ...however if you like that taste, its optional only.It has a mild taste and its color looks mild French origin and its aroma will be pleasant .

Best side dish with Idly,Dosai and Chapati but real taste of this kuzhambu will be felt only when poured over your idly,dosai or chapatti while eating instead of just dipping and eating it, in tamil we say "Peratti Adichu Sappiduvadhu":-)

"Chutney Kuzhambu"

Recipe

Ingredients

1. Coconut - 1/2 cup

2. Roasted gram(Pottu Kadalai) - 2 tblspn

3. Green chilly - 2 nos

4. Salt - To taste

5. Onion - 1no

6. Oil- To saute

7. Mustard seeds , ulunthu - 1/4 tsp each

8. Curry leaves - 5-6 nos

Method

1. In a mixer grinder add coconut pieces , pottu kadalai, salt, green chillies and finely grind like our normal coconut chutney consistency.

2. Now  in a frying pan add some oil and saute mustard seeds , ulunthu , curry leaves and add chopped onions and cook till onions get cooked up and finally add the coconut chutney mix to this pan and add some water , nicely stir the contents and add salt if needed at this stage and then cook for 4-5 mins in medium flame (in Tamil:Kothivarumvarai) and finish your cooking and serve hot.

"Varamuzhagai Chutney"(Kara Chutney)

"Varamuzhagai Chutney", is a special and very simple to make spicy(not too spicy, tolerable spice only) chutney variety for breakfast or night dinner , within few mins it can be prepared and the taste and flavor will be in a such a way we will get tempted to eat again and again ofcourse this is a traditional chutney from grandma's age.

Best side dish with dosai, roast and hot idly(Drinking hot coffee while or after eating this chutney is famous taste combination ).

Ingredients

1. Big Onions - 2 nos

2. Red chilly - 5 nos or to  your taste

3. Tamarind paste - 1 tsp

4. Rock salt (Kal Uppu) -  To taste

5. Oil - 2 tblsp or to your taste

6. Mustard seeds - 1/4 tsp

7. Curry leaves - 4-5 nos

Method

1. Add chopped onions, red chillies , tamarind paste and salt in a mixer grinder and nicely grind it and keep it aside.

2. In a pan add oil and saute mustard seeds and curry leaves and add it to the mix in your mixer grinder and serve it.

"Carrot Chutney"

"Carrot Chutney" is a different variety chutney which has a mild taste and rich in Vitamin A contents, as we all know vitamin A is good for our eyes and kids will love this chutney as it has an attractive color as well as mild taste and it will not have any raw smell of carrots as it is nicely cooked and processed.

"Carrot Chutney"

Recipe

Ingredients

1. Carrots(peel off skin) - 3 nos medium sized

2. Big Onion - 1/2 no

3. Red chilly - 3 - 4 nos

4. Kadalai paruppu( bengal gram/ channa dhal)- 1 tsp

5. Coconut scraps - 2 tblspn

6. Mustard seeds, Ulunthum paruppu(White split gram)- 1/4 tsp each

7. Curry leaves - 5-6 nos

8. Salt and oil - to your taste

Method

1. In a frying pan add 1 1/2 tsp oil and add kadalai paruppu, chopped onions , red chillies , chopped carrots and coconut scraps , salt and saute(in Tamil:Vathakuvathu) it nicely till raw smell of contents goes off and allow it to get cool for sometime and then nicely grind in a mixer grinder and then keep it in a separate bowl.

2. Now in a pan add little oil ,mustard seeds, ulunthum paruppu ,curry leaves and roast it (in Tamil :Thalichu)
and add it to the carrot mix in the bowl and serve it.

"Kathirikai (Brinjal) Chutney"

"Kathirikai(Brinjal) Chutney" is a special type of dish variety made in South India for breakfast or dinner as an accompanient with idli or dosai.The combination of brinjal and tamarind gives us a good flavor and makes our taste buds feel a different taste apart from our regular type of  other type of conventional chutneys.

Best side dish with Idly, Dosai.

"Brinjal Chutney"

Recipe



Ingredients

   1.       Brinjal – 1/4  kg

   2.       Onion – 1 no

   3.       Tomato – 1 no

   4.       Green Chillies – 3 nos.

   5.       Tamarind Paste- 1 tbl.spoon

   6.       Salt & Oil- to taste

   7.       (Whole Green gram)Pasi paruppu- 2 tbl.spoons

   8.       Mustard seeds -1/4 t.spoon

   9.       Black gram – 1/4  t.spoon

   10.   Red chilly – 1 no.

 Method

   1.      Add  brinjal, chopped onions, tomato, green chillies, tamarind paste along with whole green gram in cooker and cook for 3 whistles.

   2.       Saute mustard seeds,curryleaves,black gram and red chilly and put it into cooked brinjal mixture. 

   3.       Nicely smash the cooked contents with wooden stick with round base.(Kadanju viduvathu) and serve it hot.
