"Thai Tom Yum Soup"

"Thai Tom Yum Soup"


Ingredients

1. Lemongrass - 1 to 2 stalks chopped.

2. Kaffir lime leaves- 3 to 4 leaves

3. Garlic cloves - 3 to 4nos

4. Fish sauce - 3 tbsp

5. Fresh lime juice - 1 tbsp

6. Red chilly - 1 no

7. Normal Mushrooms - 12- 15 nos

8. Coconut milk - 1/2 can

9. Fresh coriander leaves - 1/2 cup

10. Brown Sugar -1 tsp

Method

1. Pour vegetable stock with low sodium content  into a deep cooking pot and wait till it gets boiled up.

2. Add lemongrass to the stock and boil for 1-2 minutes and add  3-4 whole kaffir lime leaves to the soup pot and  reduce heat to medium and add 3-4 cloves garlic, pressed or finely chopped/minced.

3. Add fish sauce, fresh-squeezed lime juice,brown sugar and red chili.

4. Now add the sliced mushrooms to the pot allow it cook for 2-3  mins and then reduce heat to low, add 1/2 can coconut milk and cook for 3 mins and taste the soup if not salty enough, add more fish sauce, cook for few mins and finish your cooking and serve hot!

"Easy Thai Shrimp Saute", is a simple to make and a classic Thai dish and its one of my favorite appetizer made for my hubby's birthday dinner party which came out excellently well and you know he just loved it...!:-) the taste was very different as it had a flavor mixture of salty,lemony, little bit sweet and the consistency of the shrimp was awesome..you have to try to feel it.

Best for a candle light dinner, when served with thai sticky  rice, naan, or crusty french loaf.

"Easy Thai Shrimp Saute"

Recipe



1. Medium to large shrimp or prawns, butterflied (shells can be removed or left on, as desired) - 12- 15 nos.

2. Thai Oyster sauce - 1 1/2 to 2 tbsp

3. Soy sauce - 1 tbsp

4. Fish sauce -  1 tbsp

5. Brown sugar- 1 tbsp

6. Cloves minced garlic(to taste) - 5 to 6 nos

7. Lemon juice - 2 tbsp

8.Oil for stir-frying - 2-3 tbsp

9. Fresh red chili, minced - 1 no  (OR) dried crushed chili - 1/2 tsp or to your taste

10. Lime or lemon wedges - To your needs

11. Coriander  leaves - To your needs or 1 handful

Method

1. Marinade/sauce preparation:  Oyster sauce, soy sauce, fish sauce, brown sugar, garlic, lime juice, chilli in a mixing bowl and nicely mix all.

2. Nicely mix shrimp in the sauce and so that the sauce gets evenly coated on all sides of the shrimp.

3. Heat some oil in a frying pan, when oil becomes hot, add the shrimps along with the sauce.

4. Stir-fry 2-3 minutes, or until shrimp becomes plump and pink. They will also be lightly browned from the sauce. (Don't overcook, shrimp will turn rubbery.)

5. Garnish with coriander leaves and lemon wedges as shown or to your creativity.



Try it and you will enjoy like anything especially when its a Candle light dinner with your special ones:-)

"Crispy Chicken Pakoda" is a special dry variety chicken side dish made experimentally by me:-) don't worry friends it came out well and it is very simple and easy to make ofcourse it was done with guidance from my mom's friend...so you also try it and you will like it!  Since it is made with butter milk it is good for health than compared with cream or curd.

Best side dish taken with any kind of chicken kuzhambu or even independently taken with tomato sauce it will be good.

"Crispy Chicken Pakoda"

Recipe

Ingredients

1. Chicken (with or without bone -its your taste) - 1/4 kg

2. Buttermilk(Mor)- 1/2 cup

3. Corn flour - 1/2 cup

4. Powdered black pepper - 1/2 tsp or to your taste

5. Salt - to taste

6. Oil - to fry

7. Kadalai maavu - 1/2 cup

8. Corn flakes or bread crumbs - To your required amount.

9.Vinegar or Lemon juice - 2 tblspn

10. Onion and coriander leaves - to garnish



Method

1. Nicely clean chicken and  make it small pieces and give a slight cut over the surface and soak in the buttermilk,salt,pepper(1/4 tsp),(vinegar/lime juice) and corn flour(1/4 cup) mix for 2 hrs .

2. Then in a bowl add kadalai maavu,salt ,pepper(1/4 tsp) , corn flour(1/4 cup) and  slightly crushed corn flakes(normal flavored)  and nicely mix them all and keep it aside.

3.  Now take that soaked chicken pieces and dip in that bowl containing kadalai maavu mix and put in oil and fry(while frying keep the flame in medium level) till chicken becomes golden brown color and then garnish  it with onions and coriander leaves.

"Carrot Soup" is a special and simple to make soup variety which has a different taste when compared with other regular vegetable soups , this soup is very healthier for our eyes as basically carrots are source of vitamin A especially very supportive for our eyes. The flavor will be very authentic.

"Carrot Soup"

Recipe

Ingredients

1. Carrot - 1/4 kg

2. big onion - 1 no

3. Tomato - 1 no

4. Cumin seeds - 1/4 teaspoon powdered.

5. Black pepper powder - To your taste

6. Salt and oil -  To your taste

7. Cornflour mixed with water - 1 tbl.spoon

Method

1. In a cooker add 2 teaspoons of oil and add chopped carrots as (shown in picture above) , chopped onions and tomatoes little bit of salt and 600 ml of water and close the cooker and cook for 3-4 whistles or more till carrot gets nicely boiled up.

2. Now after steam goes off open the cooker and drain the soup water into a pan and keep it separately.

3. Now nicely grind the boiled carrots, onion and tomato mix to smooth paste and add them to soup water in the pan and cook for 5 mins and when soup gets boiled up with bubbles (Kothikavaipathu) , add powdered pepper and cumin seeds and also 1 tbl.spoon of cornflour mixed with water in order to get that thick consistency and stir it well and finish your cooking and serve it hot.

"Egg Chicken Chops", is one unique homemade dish you might have tasted rarely  , it is prepared with flour and other ingredients given below.It can be taken independently also.Its looks resembles our conventional bajji/bonda  variety , however the flavor of  batter prepared for this dish is not like regular batter for bajji and bonda. Its very simple to make it.Try it and you will love it!!

Dip: Tomato sauce can be used as dip.
 


Egg Chicken Chops

Recipe

      Ingredients

  1.      Chicken (or) Mutton – 1/4 kg.

  2.      Big Onion- 1 no.

  3.      Cinnamon,cloves- 1inch, 2nos.

  4.      Ginger garlic paste-1 teaspoon

  5.      Chilli powder- 1 teaspoon

  6.      Turmeric powder- 1/4  teaspoon

  7.      Salt – to taste

  8.      Egg- 1no.

      Process No:1

  1.  Mix all the above contents  except egg and cook in cooker for 10 mins and open the cooker and add 2-3    table spoon of oil. 

     Batter preparation:

  1.      Put  one egg and add 1/4 t.spoon chilli powder, 1/4t.spoon saunf, 1/4t.spoon turmeric powder, maida flour(4 tbl spoon) , 1/4t.spoon cornflour and 1/2 tumbler  boiled milk in a bowl and mix it well .

     Process No:2 

  1.      Put some oil in a pan and put the chicken mixture in it and smash it while cooking.
  2.      Dip that smashed chicken in the batter and fry it in a pan with oil and serve it.

"Chilly Chicken Fry" is a well known famous dish which is loved by all the sector of people.Its crispy consistency and masala flavor is special for its popularity. Home made chilly chicken masala gives a lively flavor than ready made chilly chicken masala.Try it!!




Chilly Chicken (Boneless)

Recipe

Ingredients

1.         Chilly Chicken –1/2 kg (boneless)

2.         Chilli powder- 1 to 2 teaspoons

3.         Turmeric powder- 1 teaspoon

4.         Ginger garlic paste- 1 teaspoon

5.         Egg white- 1 no.

6.         Maida flour(refined flour)- 1-2 tbl spoons

7.         Rice flour/Cornflower- 1 tbl spoon

8.         Saunf-1/4 teaspoon

9.         Salt-  To taste.

10.     Curd- 2 teaspoons

Method

1.         Add chilli powder,turmeric powder, saunf, salt, maida,gingergarlic paste, curd and egg white and mix it well. 

2.         Add rice flour or cornflour and again mix it well.

3.         Put some oil in frying pan and fry it to crisp consistency and serve it.

Note: You can also add Roasted Rava in the batter and fry it it will give more crispy nature.

"Chicken cutlet" is one of the most mouth watering dish made with the below mentioned ingredients and processing method,as the taste of this dish is different from our regular chicken fry , we can have it even independently without in any food combo!! 

Dip:Tomato Sauce is best dip for this dish.

Best side dish for any type of chicken masala(Kozhambu).

When there is a get together or any thanksgiving in your family ..Chicken cutlet will be center of attraction and the taste will make your friends and relatives remember you forever:))

Keep this dish as a base taste and always try and upgrade your cooking style with your ideas and share it!!

 Chicken Cutlet

Recipe

Ingredients

  1.      Chicken : 1/4 kg

  2.      Chillipowder: 1 tbl spoon or to your taste

  3.      Turmeric powder : 1/4 teaspoon

  4.      Garam masala :1/4 teaspoon

  5.       Egg : 1 

  6.      Salt to taste

  7.      Coriander Leaves to mix in the content

  8.      Pottu Kadalai(Roasted gram) Flour for binding : 1-2 tbl spoon

  9.      Saunf(Aniseed): 1/2 tbl spoon

  10.  Bread Crumbs: Desired Qty.

  11.  Oil: To fry

"Chicken Cutlet with Tomato Sauce"

 Method

  1.      Mince chicken to small pieces in mixer.

  2.      Mix the minced chicken together with all the above mentioned ingredients without water and tap it to your desired shape (oval/flat circle/ball like shape).

  3.      Beat the egg (both yolk & white together) and keep it separately.

  4.      Dip the shapes into egg and dip with bread crumbs both sides thoroughly.

  5.      In the medium flame give a gentle golden brown fry or fry to your taste (or) Use Dosa ironplate to fry with less oil.

  6.      Garnish with carrot, coriander leaves and onion or to your style.
