"Poondu Kuzhambu(Garlic Masala)" otherwise called the "shining masala" as you have seen in the picture,  is one famous dish variety in South India , this dish has its own flavor of sharp taste( in tamil we call as "Surukk")  that makes any one of your eyes shut for sure when tasted.This dish also got its medicinal effects  of clearing off your gastric problems as Garlics plays the vital role in this dish.This dish when taken in your breakfast will definitely sweeps away your sleepy mood and make you active.

Best side dish for White plain rice, idly, dosai and best accompanied with thick curd rice!!






Garlic Masala(Poondu Kuzhambu)


Recipe

Ingredients

  1.      Garlic -  15 to 20 Tooth

  2.      Coriander Powder  - 2 tbl.spoon

  3.      Chilly Powder – 3/4 teaspoon

  4.      Turmeric powder- 1/4 teaspoon

  5.      Tamarind– 1 lemon size

  6.      Tomato- 2 nos

  7.      Vadagam – 1/2 teaspoon

  8.      Vendhayam(fenugreek)- 1/4 teaspoon

  9.      Curry leaves – 6-7 nos

  10.  Gingely Oil + Ghee – 2-3 tbl spoon

  11.  Stone Salt- To taste


Method

  1.    Take tamarind purie (Karachu) and add coriander,turmeric and chilly powders and salt in a vessel.

  2.   Put Oil+Ghee in a pan and add  vadagam, curry leaves, vendhayam and garlics and(Thalichu) roast till    garlic becomes golden brown.

  3.   Pour tamarind purie along with mixtures in point no.1  into the pan mentioned in point 2.

  4.   Cook till oil and ghee separates in the masala visually.
