"Varamuzhagai Kozhi Kuzhambu(Red DryChilly Chicken Masala)" is one traditional South Indian dish, famous for its special taste and flavor different from normal cooking style of conventional chicken masala in which coconut will not be added , the color and the oily layer in this masala will attract your eyes whereas the smell of this masala will rule your nose and the taste will be a treat for your taste buds!!

This dish can be served for plain White Rice, Chapati , Idly , Parotta , Naan and even Bread.

Recipe



Ingredients

  1.      Chicken(or) Mutton :1/4 kg

  2.      Big Onions:1/4 kg

  3.      Tomato: 2 nos medium sized

  4.      Ginger garlic paste: 1 tbl spoon

  5.      Chilli powder:1 tbl spoon

  6.      Turmeic Powder: 1/4 teaspoon

  7.      Cinnamon 1 inch sized : 1no

  8.      Cloves :2 nos

  9.      Green Cardamom: 1 no

 10.  Saunf(Aniseed): 1/2 teaspoon

 11.  Coconut: 1/2  cap.

 12.  Kasa Kasa(poppy seeds): 1 tea spoon

 13.  Cashew nuts full : 5 nos

 14.  Coriander & Mint leaves together: 1 handful

 15.  Oil + Ghee : 2 tbl spoons

 16. Lemon Juice : 1 tea spoon


Method

  1.      Put oil and ghee in cooker add cinnamon ,cloves ,cardamom , chopped onions and stir well till golden brown consistency.

  2.      Add washed chicken pieces and stir again.

  3.      Put mint & coriander leaves and cook for few mins till its raw smell is gone.

  4.      Add chopped tomato, turmeric powder, chillipowder and stir well and cook.

  5.      Wait for oil separation from contents and put 1/2  of the mixture of coconut+cashew+kasa kasa paste.

  6.      Add some hot water(1 tumbler) and salt.

  7.      Close the cooker and cook for 3 whistles.

  8.      After the steam has completely subsidized open the cooker and pour the balance coconut+cashew+kasa kasa paste.

  9.      Add lime juice and wait for oil separation by putting cooker cover without weight.

 10.  Garnish with coriander leaves.

 11.  Serve it deliciously.


Note: You can also add boiled potato while you are adding lime juice in 9th point.
