"Vadagam"






About Vadagam!!

"Vadagam" is a traditional ingredient used in all spicy Non-vegetarian masala(Kuzhambu) in South India , they are mainly added in any kind of Fish masala, Mutton Kuzhambu and even in some vegetarian masalas like Kara Kuzhambu inorder to enhance the flavor of the masala. Its raw smell really mesmerizes most of the people.
Even there is a myth "Dark angels Loves the smell of Vadagam" so only our ancestors used to say , to place iron nails or broom beside this ingredient while it is in sunlight drying process:-).

Note:Used in our following dishes "Yezhumbum Parruppum Kuzhambu recipe and Karri-Kathirikai Perattu recipe."


How to prepare the"VADAGAM"


  1.       Take small onions (1/4 kg) , mustard seeds , Black gram(uluntham parruppu), Fenugreek seeds(vendhayam), Cumin seeds(seeragam), saunf - all for ½ handful size, garlic  1 handful , curry leaves, turmeric powder-1 tea.spoon., gingely oil and castor oil.

  2.       Minse the onion and mix all the above mentioned items and make it to small balls of lemon size and keep it for one full night.

  3.       First day morning mix the balls with Gingely oil and dry it in Daylight Sun.

  4.       Second day mix it with castor oil and Sun dry it for 1 week.

  Make this ingredient and stock it in a air tight container and use whenever you require it.
